Grounded in their roots and open to the world. Young pizzaioli Mattia Onnis and Domenico Laguardia reflect on their experience working in Paris and Reims.
A Parigi, Mattia dà La Riposte
Mattia’s Riposte: Roman Pizza, Sardinian Roots, Parisian Spirit
Mattia Onnis didn’t take long to figure out what he wanted to be when he grew up. The answer was already there, rooted in his family history. His aunt opened a rotisserie and a pizza al taglio shop, and as they say, talent often runs in the family. From there came passion, study, and a vivid memory that never left him: a simple tomato pizza eaten on the beach, just after a swim in the sea. The same sea that surrounds Sardinia, the wild and beautiful land where his story begins.Today, Mattia has dropped anchor in Paris. In the Ville Lumière, near Place de Clichy and just a short walk from Pigalle and Montmartre, he has brought La Riposte to life. A lively, contemporary bistrot dressed in deep blue tones—welcoming, energetic, and full of character. Here, Mattia expresses his creativity through pizza al taglio and Roman-style pizza in pala: simple in appearance, yet incredibly versatile.
“These formats allow me to translate culinary dishes into pizza,” he explains. “They’re the best way to express my style.” A young and eclectic artisan, Mattia brings together technique, creativity, and a constant drive to experiment—fueled by his love for sport and music.
A Reims, l’Alba è fragrante
“Ho studiato all’alberghiero perché sapevo già cosa volevo e dove volevo andare.
Domenico Laguardia: Apulian Roots Behind the Pizza at Alba in Reims
Reims may be famous for Champagne, but great pizza has found its place here too. At Alba, Domenico Laguardia shapes the dough. The name is Italian, inspired by the town in the Langhe, known for its truffles and strong food culture. A small detail that reflects a clear way of thinking: simple ingredients, handled with care. Domenico works with dough because it feels natural to him. He uses his hands, follows the process, and lets time do its work. It’s a quiet, familiar routine—something he’s been carrying with him since his childhood in the Puglian countryside.“Making dough brings me back to where I grew up,” he says. Now based in France, Domenico knew early on what he wanted to do. He chose culinary school with a clear goal in mind and keeps moving forward with the same approach: learn every day, improve step by step, and stay focused on the craft.
