Il nonno Luigi ebbe l’intuizione, nel lontano 1937. Il padre Davide ebbe la visione: di aprire una forneria con caffetteria. E loro, Paolo e Andrea Piantoni, portano avanti con dedizione un’avventura capace di esprimere al massimo il carattere versatile e volitivo del pane. Perfetto persino per l’aperitivo. Da provare nelle sei insegne èl Forner, attive nella città di Brescia. Pane preferibilmente in taglia large, perché la pagnotta è social, è condivisibile, è sostenibile, non ha scarto e meglio esprime fermentazione, struttura e profumi. E se è preparata con la farina Petra Evolutiva diviene pure racconto di uomini e di terra, di biodiversità e di filiera. “Nel progetto Adotta un Raccolto abbiamo creduto sin dal primo momento”, dichiara Paolo. Orgoglioso anche del premio ricevuto come Bakery dell’Anno nella guida Pane e Panettieri d’Italia 2024 del Gambero Rosso.
His grandfather Luigi had the intuition, back in 1937. His father Davide had the vision: to open a bakery with a cafeteria. And Paolo and Andrea Piantoni carry on with dedication an adventure that expresses to the full the versatile and strong-willed nature of bread. Perfect even for the aperitif. You must try it in one of the six èl Forner bakeries operating in the city of Brescia. Large size loaves are preferable, because they can be shared, they are sustainable. Moreover, they better express fermentation, structure and fragrance. And if they are prepared with Petra Evolutiva flour, they also narrate the story of people and the Sicilian territory, of biodiversity and the supply chain. 'We believed in the Adopt a Harvest project from the very first moment,' says Paolo.Very proud also of the award received as Bakery of the Year in Gambero Rosso's Bread and Bakers of Italy 2024 guide (Pane e Panettieri d’Italia 2024).

Un territorio si può valorizzare attraverso i suoi prodotti. Oppure facendo luce sulle persone che lo abitano. È quello che sa fare un pandolce dallo spirito solidale, messo a punto dalla pasticceria Buosi di Venegono Superiore, in sinergia con la cooperativa sociale San Carlo di Tradate, impegnata nell’inserimento lavorativo di soggetti fragili e vulnerabili. Risultato? Un breakfast bread soffice ed eclettico. Proposto persino in versione prêt-à-porter. “È un pane iconico, innovativo e facilmente replicabile”, spiega Elena Pisoni, responsabile del laboratorio di produzione. Segni particolari? L’uso del lievito madre, del grano saraceno e dei mirtilli dell’Appennino Tosco-Emiliano canditi. Un pane buono, in tutti i sensi.

It is made by the Buosi pastry shop in Venegono Superiore, in synergy with the San Carlo social cooperative in Tradate, which is committed to the employment of fragile and vulnerable people. The result? A soft and eclectic breakfast bread. 'It is an iconic bread, innovative and easily replicable,' explains Elena Pisoni, head of the production laboratory. Special features? The use of sourdough, buckwheat and candied Tuscan-Emilian Apennine blueberries. A good bread, in every sense.
