Non sa dire quando sia scattata la scintilla della passione. Fatto sta che ora la fiamma è divenuta fuoco ardente e potente. E così Riccardo Pancini, millesimo 1996 e figlio d’arte, perpetua con gran classe il savoir-faire del padre Renato. Mettendo le mani in pasta e muovendosi con agilità fra i due locali di famiglia: Al Foghèr e Al Foghèr Classic. Il primo alle porte di Arezzo, non lontano dall’Arno. Il secondo nel centro storico della cittadina scenario della Giostra del Saracino. Una pizza che vibra di vita e gioventù quella di Riccardo, complici le farine bio di Petra, un’altissima idratazione e prodotti autentici e genuini. Dal prosciutto toscano al tartufo bianchetto delle foreste casentinesi, passando per una burrata dall’anima aretina.

Putting his hands to work and moving with agility between the two family restaurants: Al Foghèr and Al Foghèr Classic. The first on the outskirts of Arezzo, not far from the Arno. The second in the historic centre of the town, scene of the Giostra del Saracino. Riccardo's pizza vibrates with life and youth, thanks to Petra's organic flours, very high hydration and authentic, genuine products. From Tuscan ham to the white truffle of the Casentino forests, not forgetting a burrata with the soul of Arezzo.

Riflette, ricerca, studia, punta l’occhio lontano e guarda oltre. Verso orizzonti verdi e infiniti. Come quelli che si ammirano dalla terrazza della Pergola di Radicondoli, borgo medievale tutto vicoli e saliscendi in provincia di Siena. Eppure Tommaso Vatti tiene i piedi ben saldi per terra. In quella Toscana che lui ama e interpreta, creando pizze e pani a chilometro vero. La sua mission? Dare forma a paesaggi-assaggi, anche grazie a prodotti come la cinta senese, l’olio extravergine, i formaggi e gli ortaggi iper locali. Perché un luogo si può osservare ma si può pure mordere. E lui lo dimostra. Sia nella sua insegna ammiraglia sia nella sua bottega Autoctona. A pochi civici l’una dall’altra.
